Conventional ovens heat from the bottom so the top of the oven will be slightly hotter than the bottom. This is useful when you’re cooking lots of different dishes at a time. However, they do take a little longer than fan ovens to heat up.
Convection (or fan) ovens circulate the air so that you get an even temperature throughout the oven. They are quicker to heat up which means they save on energy and time.
Multifunction (convection or conventional) ovens give you the flexibility to use different methods of cooking. They usually have both fan and conventional settings as well as pizza settings that will only cook from the bottom, giving you a crispy pizza, or top-only cooking that is very useful for browning.
